Description During the 1980s, the idea of "spa cuisine" emerged: low-calorie, nutritionally balanced meals designed by a chef to look expensive and taste delicious. At the Evergreen, a restaurant for members of the Rockefeller Center Luncheon Club, the staff kept a record of each guest's dietary goals—for instance, to lower cholesterol and avoid sodium. When that guest showed up for lunch, the chef arranged a suitable meal from the day's menu items, complete with printed nutritional data.
